Hey Folks...I'm looking for summer recipes...BBQ, salads, deserts, punch...whatever you do that makes your backyard party the fun yummy place to be!!!!!

This is something that Martha fixes that is a big hit at special dinners or cookouts:



Strawberry Salad

Ingredients:

2 pkgs. of cherry jello
1 lb. strawberries(she uses the frozen ones)
3 bananas (mashed)
1 #2 can of crushed pineapples
1 pint of sour cream
2 cups of boiling liquid (juice from pineapples and strawberries)


Mix fruits. Dissolve jello in liquid. Put half of mixture in a well oiled mold and congeal.
Add layer of sour cream and the other half of mixture.
Congeal and enjoy.

Joe this sounds a lot like the congeal salad we make at christmas time that we use the whole cranberries cranberry sauce to make. we do the same thing here but we add cranberries instead of all the fruit. and I will say it is very much delicious and well accepted by all. there is never any leftovers.

My favorite summertime recipe is my macaroni salad

Macaroni Salad

I don't do measurements or amounts on this salad, you just put as much as you like of everything.

Macaroni - I use elbow or shell, cooked until almost tender, then drained and cooled
Tomato - diced
Kosher pickles - diced
boiled eggs - diced
Cheddar cheese - cubed
Ham - cubed (sometimes I use salad shrimp)
Thousand Island Salad Dressing
You can add a little purple onion if you like

Just mix all together, be sure and put enough salad dressing and let it chill. It's better to make the day before and let it set.

New Orleans Style Crawfish Ettouffee


2lbs Crawfish with Fat
1 C. Butter
1 Lg. Onion - Chopped
1 Lg. Bell Pepper - Chopped
3 Cloves Garlic - Minced
1 1/2 TBSP. Paprika
3 TBSP Flour
1/2 TBSP Parsley Flakes
1/2 TBSP Green onions
3 C. Water
Salt, Pepper, Red Pepper
Accent Salt and Worchesershire Sauce to Taste


Melt butter in cast iron Deep dish skillet over low heat. Add onions, bell pepper, garlic, bell pepper, and Parsley Flakes. Saute for 10 minutes over medium heat. Add flour, crawfish tails with juice, salt, both types of pepper. paprika, water and stir. Add All other ingredients at this time. Lower heat and cook on low heat for 30 minutes. Stirring occasionally. Taste if needed cook longer. Serve over Hot cooked white Rice.

Seafood Casserole

3/4 C. Butter - Real Butter
2 Onions - Chopped
2 Stalks Celery - Chopped
1 Bell Pepper - Chopped
4 Green Onions - Chopped
3 Cloves Garlic - Peeled and minced
2 Lbs. Cleaned Shrimp
2 Lbs. Crawfish Tails and their juice or 4 lbs seafood of your choice.
2 TBSP. Chopped Parsley
1 TBSP Flour
1 C. Half and Half
18 oz. Velveeta Cheese
4 oz. Parmeasan Cheese
Tony's Creole Seasoning to Taste
1 lb. Cooked Pasta


Saute onions, celery, bell pepper, green onions, garlic in melted butter until onions are clear. Add flour, half and half, and simmer for 3 to 5 minutes over low heat. Add Both cheeses and cook for 10 minutes over very low heat. Add all seafood last five minutes. Add all other seasonings. Mix well with Pasta. Pour into a greased 9 x 13in baking casserole dish. Bake at 350 Degrees for 30 minutes. Enjoy.

Southern Banana Pudding

2 lg. Boxes Vanilla Instant Pudding
6 C. Milk
2 C. Condensed Milk
2 - 8oz. Conainers Cool Whip
Vanilla Wafers
Bananas

Mix Vanilla Pudding with milk until well blended. Add condensed milk and mix well. Fold in Cool Whip.


Layer Vanilla Wafers, Bananas and Pudding mixture, until all has been used up. Top with cook whip and refrigerate unitl serving time.

Note: this recipe can be halved or used as given. this makes a large serving. Great for Church Socials and Picnics.

Favorite of all members of the Providentials Quartet.

Buttermilk Pound Cake


3 C. Sifted Cake Flour
1 tsp. Baking Powder
1 C. Butter
2 2/3 C. Sugar
4 Eggs
1 C. Buttermilk
2 tsp. Vanilla

Sift flour 3 times with baking powder. Cream Butter and sugar well. Add eggs one at a time beating well after each addition. Add milk and flour alternating. Pour into a well greased and floured tube pan. Bake in a preheated 350f oven for one hour. Cool on cake rack and enjoy.
