Chocolate Zuchinni Bread
2 cups sugar
3/4 cup vegetable oil
3 large eggs, lightly beaten
2 (1-ounce) squares semisweet chocolate, melted
2 cups grated zucchini
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 cup miniature semisweet chocolate morsels
Preheat oven to 325°F. Grease and flour 2 (9x5x2-inch) loaf pans.
In a large bowl, beat sugar, vegetable oil, eggs, and melted chocolate with a wooden spoon until combined. Stir in zucchini and vanilla.
In a small bowl, combine flour, soda, and baking powder. Gradually stir into sugar mixture until mixture is smooth. Stir in chocolate morsels.
Pour batter into prepared loaf pans. Bake 45 to 55 minutes, or until a tester inserted in center comes out clean. Let cool in pans 10 minutes. Remove from pans and cool completely on wire racks.
Sweet Potato Biscuits
These are wonderful hot from the oven with butter.....I got the recipe from Paula Deen's cooking show.
*Patti's note....She used all purpose flour with 4 tsps of baking powder and 1/2 tsp salt, but I used self-rising flour which already has the salt and baking powder....it's easier and seemed to taste better to me...I tried both ways.
1 1/4 cups self-rising flour (or you can use all purpose and add 4 tsps baking powder and 1/2 tsp salt)
2 heaping tablespoons sugar
3/4 cup mashed cooked sweet potatoes
1/4 cup (1/2 stick) softened butter
2 to 4 tablespoons milk (depending on the moisture of the potatoes)
Preheat oven to 450 degrees F.
Sift sugar and flour together in small bowl (if using all purpose flour, sift flour, salt, sugar and baking powder together). In a separate, large bowl, mix the sweet potatoes and butter. Add the flour mixture to the potato mixture and mix to make a soft dough. Then add milk one tablespoon at a time to mixture. (remember, you may not need all the milk)
Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. You can either roll the dough out to 1/2" thickness and cut with a biscuit cutter or just pinch them off and roll them in your hands. Place the biscuits in a greased pan, coat tops with melted butter. Bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temp.)
To me...the biscuits were better if they didn't brown too much...they need to be soft.
This makes about 7 or 8 good sized biscuits....
