I bought some homemade "buckeyes" in Cracker Barrel before coming home, and I was wondering if anyone had a recipe for these? They'd be great at Christmas.

Lorraine, I found this recipe on the internet......lol....I imagine it would be similar to Cracker Barrell's....
Recipe for Buckeyes:
2 cups peanut butter, smooth or crunchy
1 stick of margarine, melted
2 teaspoons vanilla
2 & 1/2 cups powdered sugar
Mix all ingredients together. If too wet, add extra powdered sugar. Roll mixture into balls with your hands, place them on a cookie sheet covered with wax paper, and freeze for 15 minutes.
1 package chocolate bark coating OR
1 package chocolate chips
1/2 cake paraffin
If you don't use bark coating then melt the chocolate chips and paraffin in a heavy pan. Or heat the bark coating until melted.
Stick a toothpick into the cold buckeyes and dip into the melted chocolate. Almost cover the candy with chocolate, leaving one spot with the peanut butter exposed. Place on a cookie sheet covered with wax paper. Put in freezer until they are set (about 15 minutes). Enjoy!
Yup, that looks like them. I was guessing icing sugar with the peanut butter...

Now this sounds like something fun for my Mission Friends to enjoy on Wednesday evenings after we have done our Missions Study and learned our Bible Verse for the week. Thanks CanChik and Joe both.
